Paleo Lamingtons

I devised this recipe last year for a school special morning tea. We have a special morning tea coming up tomorrow and I have offered to provide a Paleo treat for the kids who are unable to eat gluten, grain, dairy, sugar and of course nuts.

They taste divine and are a hit with the adults at school too :-)

Ingredients

Cake
4 eggs
160g Coconut Oil
1/2 cup Coconut Flour
1/2 cup raw honey
1 tsp bi-carb soda
1 tsp vanilla extract

 

Paleo Chocolate Frosting
1 Cup Solid Coconut Oil
1/2 Cup Cacao Powder
1/2 Cup Raw Honey
1 Tablespoon Coconut Milk

1 Cup of Shredded Coconut/ Desiccated Coconut

 

Method

Preheat oven to 180 deg C (350F), no fan.
Put all ingredients into the Thermomix and mix on speed 5 or put all ingredients into a food mixer and mix until a smooth consistency.
Line cake dish I use a square cake tin with baking paper or grease with coconut oil.
Pour in batter and use spatula to spread out evenly (it will be thick).
Place on middle rack in oven and bake for 35-40 mins, no fan.
Test if cake is ready with a skewer, pierce the middle and if it comes out clean it’s ready.
Allow to cool to room temperature, place it in the fridge if in a rush.

Paleo Chocolate Frosting

Mix all ingredients in the Thermomix at speed 7 or in a food mixer until a smooth chocolate mixture appears

Cut the cake into even sized squares or rectangles and then dip them into the chocolate mix and finally roll them around in the desiccated coconut and leave on some baking paper and transfer to the fridge to allow the chocolate to set a little.

Remove from the fridge 10 – 15 minutes before they are to be eaten. Enjoy!
